Yes, better mining = better shelter (made out of cobblestone instead of dirt) as well as the ability to mine further and get to the good stuff. Once you have diamonds for example, you can made a diamond pick axe that will last almost forever.
Torches are essential in mining (obviously you need so see where you are going) because monsters won't spawn where light is. So if you have a fully lit mine shaft, no monsters will spawn in there and you can safely mine.
You can battle the monsters, but if there is more than two in the same area, you will die. I've been playing a map on Normal and i don't dare going out there. At any given moment during the night, i can see a dozen monsters.

Also, last night I was mining inside my dwarven fortress when my game crashed on me... when I reloaded I was in the right place but all the blocks that I had mined returned and I drowned in stone. Couldn't redig to my burial location to find my loot so I had to start fresh T_T I'd just found a massive iron ore vein too : [
I have not started digging yet, but i plan on doing so tonight. I just build a huge ass fort on the side of a mountain for peace a quiet (See: my difficulty level and monsters). Outside my rudimentary fort walls i have some man-made plains for farming. I just need to find a good water source.

Aside from my tower to help me navigate, I have no outdoor structures. However, I have a pretty complex set of tunnels mined. I'm not sure how deep it actually goes, but I can tell you I have to go up 80 steps or so to get back to my door to the outdoor world.
There is also a large bay in my part of the world, so I decided to build a gravel dock/walkway across, because for whatever reason a lot of pigs spawn on the little island across the large/deep body of water.
